Excellent knife! As a paring knife, I absolutely love it. Takes and holds and amazingly sharp edge. As a bird knife, I’d rather use a 4″ fillet knife. There’s nothing wrong with the knife itself, and its every bit as good or better than any other bird or small game knife on the market. I cleaned roughly 20 pheasant over the past couple of weeks. I started out using this knife, but after a couple of days I went back to using a name brand 4″ fillet knife because I prefer that blade shape for breasting out birds. This blade is definitely higher quality (in both materials and craftsmanship) than the 4″ fillet knife that I use, but I still prefer the geometry of a small fillet knife for this kind of work. I used the 6″Kermode fillet knife (which I LOVE) on a few birds as well. I liked using it more than I liked using the bird and trout blade, but I still found that I preferred the shorter 4″ fillet blade. This would make a pretty good small game knife for squirrels and rabbits though. Taking off one star only because I didn’t care for the geometry of the blade for its intended purpose. Still an excellent paring knife though, and I’m very happy to have it in the knife block in my kitchen.
